Dornoch Distillery, originally established as the Black Isle Whisky Company, is a dynamic venture founded by brothers Simon and Philip Thompson. Their journey began with a whisky bar in Dornoch and evolved into the creation of Dornoch's first whisky distillery. Through a successful crowdfunding campaign, they garnered support from whisky enthusiasts worldwide who shared their passion for reviving old distillation styles. The distillery's story began in 2017 with the crafting and maturation of Dornoch New Make Spirit, leading to the filling of over 500 casks.

While building the distillery, Dornoch Distillery ventured into independent bottlings of rum and whisky, becoming a significant income source. Today, the company operates with a small, dedicated team in Dornoch and has a global presence.

In 2022, Dornoch Distillery announced plans for expansion, including a new distillery named "Dornoch South" with a focus on sustainability and carbon neutrality. This expansion aims to establish Dornoch as a world-class whisky destination, complete with a visitor center and tasting room.
